Fermented on skins at 18 - 20 Degrees for 7 days. Matured in selected French oak for 15 months prior to blending and bottling.

Good early season rains followed a very early budburst in late August with even growing conditions continuing until Christmas. Ripening commenced in mid December and with the very low seasonal crop levels the harvest was the earliest for decades. All major varieties were picked before the first rains in late January. Our Shiraz blocks were picked with great colour and structure at over 14Be. Cropping levels for Shiraz were 0.5 to 1.5 tonnes/acre and we expect the wines to be classics.

Our Limited Release ‘Tallavera’ Shiraz comes from its namesake vineyard in the Mount View area of the lower Hunter Valley. The Mount View area contains 3 small protected subvalleys with highly favourable soils influenced by the large proportion of limestones in the underlying rocks. Terra Rossa clays over crumbly limestone and free draining red and brown clay loams cover hill slopes and are planted to red varieties.

2013 Australian wine companion-2011 NSW WINE TOP 100 - 95 Crimson-purple; the complex bouquet has plum, mulberry and a hint of sweet earth, the soft, supple medium-bodied palate with great line, length and balance, the tannins silky, oak restrained. Drink to 2030.
