Founded in 1991, Pepper Tree has been part of Hunter Valley wine country for more than thirty years, and remains one of the region's established names.
The Hunter is home, and always will be. Alongside it, we draw on three more of Australia's premium regions: Orange in NSW, and Wrattonbully and Coonawarra in South Australia. Four sites, each chosen for what it does best — Semillon and Shiraz from the Hunter, cool-climate whites from Orange, Cabernet from Coonawarra and Wrattonbully.

John Davis
Chairman & Owner
John Davis bought his first vineyard in 1982 and his first winery in 1988. What began as a serious side interest has, over four decades, become Pepper Tree.
A Sydney University graduate with First Class Honours in Science and a PhD in Geology, John brings a scientific eye to viticulture. His understanding of soils and climate has shaped every vineyard decision Pepper Tree has made — matching variety to site across the four regions.
He acquired Pepper Tree in 2002 to bring it all together, inviting Karl Stockhausen to consult on signature wines and, in 2007, bringing Jim Chatto in as head winemaker. Under their care, Pepper Tree has earned 121 five-star ratings in the Halliday Wine Companion between 2010 and 2026, and was shortlisted for Australian Winery of the Year in 2024.
John remains hands-on across the business. His home sits in the middle of the Hunter Valley vineyard at Mount View.

Pepper Tree runs its own dedicated marketing, sales and export teams, allowing us to deal directly with our consumers. This practice, along with our vineyards and the passion and expertise of our team is what makes Pepper Tree Wines what it is today.
